The art of cheese-making is in creating different textures and combining it with the right ingredients. Quantities, technique and temperature are the most important factors. We’ve brought you a soft-cheese-inspired menu this time round.
5 home-made cheese tapas:
- Feta , caper berry and tomato carpacci
- Crostini mini mozzarella, chestnut pesto and sun dry tomato
- Goat cheese and caramelised apple pearls
- Ricotta and courgette cannelloni
- Potato focaccia with queso fresco and spicy fish
Main:
- Lamb rack with parmesan crust, cheesy potatoes and baby onions and rosemary gravy

- Courgette stuffed with white beans , roasted rede peppers with a parmesan crust, cheesy potatoes and baby onions (v)
Dessert:
- Hot cheese cake with blackberry sorbet and pistachio sauce
